Cornmeal Pancakes (From 1803 or so)

1 1/2 c. flour

1/2 c. yellow corn meal
3 Tbsp. sugar
1 tsp. baking soda
1 tsp. salt
2 cups buttermilk
2 eggs, beaten
2 Tbsp melted butter
Mix all dry ingredients together, add the wet ingredients and mix until until just moistened. Bake on a hot, greased griddle. [Batter will be thinner than normal! But it is ok!]

Gluten Free Version:
use 1 3/4 c. Pamelas GF Baking Mix, omit the baking soda and use only a pinch of salt.
