This is one of my hubby’s absolute favorite recipes. Every time I make it, it seems someone comes to the door and asks what I am making! So the smell is good I guess- but watching my kids scarf it down tells me the taste isn’t too bad either.
6-8, 3/4″ Pork Loin Chops- boneless
1 apple, cut up into small chunks (use sweet one- pink lady, or gala, or golden delicious work best)
dash of ground ginger
2 Tbsp brown sugar
1 tsp yellow curry powder
1/2 c. apple cider vinegar
2 Tbsp oil
Salt and Pepper
2 Tbsp chopped onion or 1 tsp dried onion
sprinkle garlic powder or dried minced garlic or 1/2 fresh clove minced
1/4 tsp cinnamon
Pour oil into a 12″ skillet or frying pan, set on med to med-hi heat.
Salt and pepper your chops then put them into the pan. Sprinkle the garlic, onion, and 1/2 the curry on top of the chops. Let them cook for about 5 minutes or so until it looks like they are cooked about half way.
Turn them over, add 1/2 the cider vinegar to the pan to loosen any food particles that have caramelized to the pan, then sprinkle the last 1/2 of the curry powder, the cinnamon, and the ginger on the chops. When they are just about done, about 4 minutes, add the apple chunks and remaining vinegar and then cover the pan for about 2 minutes. Serve with hot buttered rice.
