When I was in grade school, some 20 years ago (I know, I feel old!) one of my friends’ mom’s would bring these waffle cookies to class when it was her birthday or if she was a room mother for a party or something. I LOVED them. I remember loving them so much I traded an eraser I loved to another kid to have theirs…. They are kind of like a brownie, fudge, cookie….YUM.
2 sq unsweetened chocolate (or 6 tbsp cocoa powder mixed with 3 tbsp oil)
1/2 c. butter
3/4 c. sugar
1 c. flour
1 tsp. vanilla
Melt the chocolate and butter (or if using the powder and oil, melt the butter and mix the chocolate into the butter.)
Beat eggs and sugar together. Add the chocolate mixture. Add flour and vanilla and mix either by hand or with an electric mixer. Drop by teaspoonfulls onto hot waffle iron. Cook about 1 1/2 minutes with the waffle iron closed. Be sure to grease your waffle iron well. Frost with your favorite frosting after cooled. Makes 3 dozen or so.
Frosting I used: 1/4 c. butter, 3 Tbsp cocoa, 2-3 cups powdered sugar and about 1/4 c. milk to thin to consistency you like. It is a little thin, but sets well.
