In the March 2012 FRIEND magazine, (a magazine for children ages 3-12 from the Church of Jesus Christ of Latter-day Saints) there is a recipe for “Mix-in Muffins”. My daughter asked to make these for breakfast the other day and it was really fun!
I made the basic batter, then my daughter got out 5 large cereal bowls and we decided on 5 different flavors we wanted and added a few ingredients to each bowl (about 2 Tbsp worth), then divided the batter into the 5 bowls and made 12 muffins out of them! It was great fun. She let her younger siblings decide the flavors of two of them to include them. Isn’t she nice! 🙂
We made: Chocolate Chocolate Chip, Lemon, Strawberry, Caramel, and Banana!
Here is the recipe:
1 egg, beaten
1 cup milk
1/4 cup oil
2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1 tsp salt
mix-ins of your choice
Preheat oven to 400F.
Line a muffin pan with 12 liners or spay well with non-stick cooking spray.
Mix the egg, milk and oil in a bowl.
Add the flour, sugar, baking powder and salt. Batter will have lumps.
Add your mix-in(s) and then fill each muffin cup 3/4 full of batter.
Bake for 18 minutes or until firm to the touch of your finger-tip. Cool for 5-10 minutes before removing from pan. Enjoy!
