Stir and Drop Sugar Cookies (15 mins!)


Ok, so this is NOT a healthy recipe, but since you are looking for COOKIES, I suppose you know that’s just what comes with the package…. however, this recipe has come in handy many times when I needed/wanted sugar cookies and just didn’t have the time for the traditional (and a better, I think) sour cream soft sugar cookie recipes that you roll and cut. Those recipes need the dough to chill for 30 mins to an hour before you can work with them.

Stir and Drop Sugar Cookies
2 eggs
3/4 c. oil
2 tsp vanilla
3/4 c. sugar
2 c. flour
1/2 tsp salt
2 tsp baking powder
Preheat oven to 350F.
In a medium bowl with a spoon or fork briskly mix the eggs, oil, and vanilla. Blend in sugar.
Add the flour, salt, and baking powder. Form into 2 inch balls, dip in sugar and place on greased cookie sheet. Bake 10-12 minutes (the edges will not brown like most cookies, so don’t over cook them waiting for that!). Let set on cookie sheet for 3 minutes before gently removing to a cooling rack. Frost when cool.
