A few recipes for the HOLIDAYS!


Homemade Sweetened Condensed Milk

1 cup nonfat dry milk
1 cup sugar
1/2 c. really hot water
1/4 cup butter

Mix well in a blender. Use in any recipe calling for sweetened condensed milk.

Homemade Hot Cocoa Mix
1 serving:
1 tsp cocoa powder
2 Tbsp sugar
dash of salt
1/4 tsp vanilla
6-8 oz hot milk
mini marshmallows if you want

When my kids come in from the cold, I just take out these ingredients, put a mug in the microwave for 1.5 mins with milk, and then stir the rest of the stuff in as it comes out. Sometimes I made a large batch, but they like to stir their own. I feel that the store bought hot cocoa mixes are not only fake chocolate flavored, but they are straight sugar. This mix tastes like a melted chocolate bar!

Homemade Hot Cocoa mix for camping or for a large group
12 cups instant powdered milk
1 lb container hershey’s Quick
1 lb container Coffeemate (powdered creamer)
2/3 cup powdered sugar
1 pk mini marshmallows

Mix altogether and store in an airtight container. Add 1/3-1/2 cup into hot water and stir.

Homemade DONUTS! (This recipe is over 100 yrs old)
1/4 c. sugar
1/4 c. shortening
1.5 tsp salt
1 egg
1/2 c. smooth mashed potatoes (opt)
1 cup milk, warmed
1/4 tsp lemon juice
dash of nutmeg or mace
1 Tb yeast
3.5 cups flour approx.

Soften yeast in 1/4 cup very warm water and dash of sugar. Cream sugar, shortening, and salt together. Add egg and mix. Add lukewarm milk, lemon, (mashed potatoes if you wish) and yeast. Add enough flour to make sough a little softer than bread dough- still a little sticky, but pulling away from the sides. Don’t knead. Spray the top of the dough with non-stick spray and cover with plastic wrap and let rise until doubled. Using flour on your workspace, knead very gently until not too sticky and then roll out 1/3 inch thick and cut. Allow donuts to rise until doubled and then fry in hot oil- remember to put them in bottom-side up! Let them brown, turn and brown again and the drain and glaze. Recipe can be doubled easily. This amount will make approximately 2-3 dozen.

Glaze: mix powdered sugar and water together to the consistency of cream add 1 tsp vanilla. Dip hot donuts in and right out again. I like to make the glaze in a large bowl and use a long wooden spoon handle to set the donuts to drain over the glaze. This is a great way to let the kids help! They love to help glaze the donuts.
