Three of my Favorite GRAIN Free Baked Desserts

Three of my favorite GRAIN free desserts:













Ingredients:
4 eggs, separated
1/8 tsp cream of tartar
1 cup + 2 tbsp sugar (i used 1/2 honey)
Zest of one orange (opt)
1/2 tsp Cinnamon
1/4 tsp salt
2 tsp vanilla
2 cups grated carrots
1- 3/4 cup almond flour (I have also used coconut flour, and a grain free mixture of flours)

Frosting:
2 Tbsp cr cheese, room temp
2 Tbsp butter, room temp
1 cup powdered sugar
1 tbsp milk
1 tsp vanilla

For the TORTE:
-Preheat oven to 325F
-Grease and 8 inch springform pan and dust with flour of your choice (I also used a regular 8 inch pan rubbed with butter and lined with wax paper)
-In large bowl combine egg whites and tartar; beat at high speed until soft peaks form, then add 2 Tbsp sugar and continue to beat until stiff peaks form; set aside.
-In a separate large mixing bowl, combine 1 cup sugar, egg yolks, orange zest, cinnamon, salt and vanilla; beat at medium speed until light in color and fully incorporated.
-Using a spatula, fold in grated carrots and a third of the egg whites until combined.
-Fold in remaining egg whites and flour; continue to fold until incorporated.
-Pour batter into prepared pan, and bake for 45 minutes or until starts to brown on top and sides start pulling away from the pan.
-Cool completely before cutting and/or frosting.
For the FROSTING: Mix everything together and either spread it on your cake, or dollop a little on each piece or use a decorator bag to zigzag it on as seen in my picture. I cut this cake into 16 pieces as it is very rich.

Chickpea (Garbanzo Bean) Chocolate Chip Cookies

****I used a potato masher to mash my chickpeas as small as I could, and then used a regular hand mixer for the rest of the ingredients….. so a food processor is not necessary. 🙂


Black Bean Brownies
1 can black beans, rinsed and drained thoroughly, and mashed with a masher as fine as you can get it
3/4 c. sugar
2 tbsp coconut oil (or regular oil)
1/3 c. cocoa powder
3 eggs
2 Tbsp vanilla
pinch of salt
Sprinkling of nuts or chocolate chips

Preheat oven to 350 F
-Blend beans, sugar, oil, cocoa, eggs, vanilla and salt.
-Batter will be thin. Pour into a greased 8×8 pan.
-Bake until top and sides are set. About 30 minutes.
-Cool before slicing.
