Peanut Butter, Chocolate, and ……… Garbanzo Beans? What the?

Ok. So I LOVE peanut butter. And I LOVE chocolate. Sooooo put them together in a cookie? My day is MADE!

But since I’m trying to cut the refined sugar and flour… how can I make this yummy concoction work out? Isn’t that our goal as we try to become healthier? Configure the recipes we like NOW— to fit our new mantra? Yep. Thats what I do anyway… I’m not one for the tofu scrambled eggs, tofurkey for Thanksgiving, and a triscuit with a sliced strawberry for a snack… I mean, REALLY?

So…. I’m going to share with you today one of my ALL time favorite cookie recipes that has…….
get this……..

NO WHITE SUGAR
NO WHITE FLOUR
NO OIL
NO BUTTER
NO SHORTENING
NO SALT
NO EGGS
NO MILK

The Original Yumminess = Chocolate Chip Peanut Butter Cookie Bites

Here is how I make it….

1 can of garbanzo beans/Chickpeas, drained, patted dry
1/2 c natural peanut butter, + 2 Tbsp
1/4 c. honey, I use RAW
1 tsp baking powder
1/3 cup, dark chocolate, milk free mini chocolate chips (regular will work, I just like these little babies.)
2 tsp vanilla

Step one. Open your can of Garbanzo beans………..

2: Mash them with a potato masher, then pour them into a bowl.

3: Then add the remaining ingredients, and mix til its all well blended.

4: I use a 1 Tbsp cookie scoop to put them on the pan, and they dont spread, so I can put them fairly close together (I’m all about saving time, energy, and washing. 🙂 ). Bake at 350 F for about 10 minutes, let them cool slightly on a cooling rack, and enjoy!!
