Home Made Granola BARS!

It’s back to school time, and time to be on the look out for HEALTHY SNACKS! Those school kids get HUNGRY!
Or….. maybe its just mine?? lol!
This recipe was posted in my COUPLES Health and Fitness Challenge Group today, and it is PERFECT! Whole ingredients, and stores easily. MY KIND OF RECIPE!

“I had to find things that were easy for [my hubby] to snack on while driving truck and I didn’t want to buy granola bars full of ingredients I didn’t understand. I used a few online recipes for suggestions and kind of came up with my own recipe. My entire family LOVES them so they can’t be too bad. Thank be great for my kids after school snack. I make a really big batch and it lasts all week for my 9 member family. It also makes my house smell really good while making them. Enjoy!”

1 stick unsalted butter
1/4 cup coconut or macadamia nut oil
6 cups oats (not instant)
Preheat oven to 350°. Melt butter and combine with oil. Place oats in large bowl and pour butter/oil over top and mix well. Sprinkle a very small amount of salt on top and mix again. Spread oat mixture onto a large baking sheet and cook for 15-20 minutes. Shake the pan a few times while cooking. Remove and allow oats to cool.
In a saucepan over medium heat combine the following:
3/4 cup brown sugar
2/3 cup honey
1/4 cup molasses
1/3 cup apple juice
Cook until it just barely starts to boil and remove from heat. Stir in 3 tsp vanilla. Place cooled oats back into large bowl and add the following:
2 cups rice crispies
1 cup wheat germ or ground flaxseed (for gluten free) or a 1/2 cup of each.
You can add anything else you want in your bars at this point such as:
Chopped nuts (almonds, pistachios, etc)
Dried fruit (I love dried pineapple in mine)
Toasted coconut
Small amount of dark chocolate, peanut butter or butterscotch chips
Seeds (chia, sunflower, etc.)
I generally add a cup of whatever I choose except the chips. I use a 1/2 cup of those. If you decide not to add anything, you may want to cut back a little on your liquid ingredients.
Mix everything together and then pour liquid mixture over the top of dry ingredients. Mix until everything is combined well. Line your baking sheet with tin foil and spray it with cooking oil. Press mixture into baking sheet firmly. Oven should be at 325° at this point. Bake for 20-25 minutes until golden brown. Remove and let them cool COMPLETELY. Once cooled carefully peel foil from back. It should come off quite easily. Cut into bars and store in an airtight container.
