I LOVE chicken salad sandwiches, whether it’s for a wedding, a baby shower, or any event, it’s delicious. But, it doesn’t have to be chocked full of mayo. Here’s my own, CLEAN, recipe for chicken salad:
10 oz. canned chicken (or about a cup cooked), 1/2 c. grapes (halved), 1/4 c. slivered almonds, 1 celery stalk, 1 avocado, 1/2 tsp. yellow curry powder, 1 TB lemon juice, S&P and vinegar to taste.
Serve in whole wheat pitas with alfalfa or bean sprouts OPT. Makes 2 servings (save some for tomorrow!)
